Masala Chips

A lip-smacking vegan side dish that is an Indian restaurant favourite. If you are a fan of chips and gravy, you really should try this. You can make this dish even quicker by using frozen chips!

  • 3 tbsp olive oil
  • 1 tbsp ginger & garlic (ground to a paste)
  • 1/2 onion
  • 1 green chilli
  • 1 tsp chilli powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/2 tsp salt
  • 200 ml passata/blended chopped tomatoes
  • 1 tsp tomato puree
  • Fresh coriander (finely chopped)
  • 2 tsp lemon juice
  • 1 spring onion (finely sliced)
  • Freshly made or frozen chips

1. Heat the olive oil in a pan on a medium heat and fry the ginger and garlic for a minute.

2. Add the spices and cook them for two minutes whilst stirring, then add the tomato puree and cook further for four minutes.

3. Now pour in the passata/blended tomatoes, give it a good stir and cook further until it reduces further and becomes slightly thick.

4. To finish the masala sauce add some of the fresh coriander and the lemon juice. TASTE it to check for seasoning, if it needs more salt add some.

5. I then blended the sauce to make it completely smooth and velvety. Now throw in your chips and mix with the sauce. Plate up the masala chips on a plate and finish with a sprinkling of coriander, lemon juice and the spring onion.

This dish is awesome served alongside some grilled meat and a cold pint.

Serve immediately so the chips remain crispy without the sauce making them soggy.

Try the recipe using red chillies and see how that tastes!
