Fantastic Fajitas

A very healthy & scrumptious Mexican wrap

These are less effort to make than those out the box fajita kits! Also, because they are home made there won’t be any additives, flavour enhancers or dodgy stuff that you will find on those fajita kits. These fajtias are great for when you are short of time and are craving something tasty, filling and healthy.


  • 480g turkey breast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • 1 tsp cumin
  • 1/2 medium onion
  • 1 small courgette
  • 1 small green pepper
  • 1 small red pepper
  • Shredded lettuce
  • Tortillas


  1. Very simple, mix all the spices together to create the fajita seasoning. Slice up the turkey breast into strips and mix it well with the spices, you can do this a day in advance so the spices can really flavour the meat. (Save some of the seasoning to use on the veggies later on). If you don’t want to use turkey, chicken, beef or king oyster mushrooms would also work really well with this seasoning.

2. You can’t have a fajita without some nice veggies. I used bell peppers, onion and courgette, but you can pretty much use what you like. All I did was slice them into strips, simple.

3. On a medium-high heat add a tbsp of sunflower oil and fry off the sliced onion for around a minute, then add in the turkey and stir around, cook that for a few minutes. Next add in the rest of the vegetables along with that leftover seasoning from step 1, and cook the ingredients on a medium heat until done.

4. To heat up your tortillas, what I like to do is lay them on top of all the fajita filling to gently warm up on that delicious turkey and vegetables.

5. Last step is to add some shredded lettuce to your warm tortilla along with the beautiful filling and of course some salsa. I have a great recipe for authentic Mexican salsa here.


You can also add some sour cream and guacamole to your fajitas.

If you like your food spicy, why not throw in some freshly sliced chillies to your vegetable mix!
