Chicken satay with peanut dipping sauce

Always a top pick at south-east asian restaurants and for good reason! Easier to make than you think and you can do 90% of the work the day before, perfect to impress your friends and family at your next bbq.



The chicken

  • 3 Chicken breast
  • 2 cloves of garlic
  • 2 Chillies
  • 3 tbsp Soy sauce
  • 2 tbsp Sesame oil
  • 1 tsp honey
  • 1 tbsp curry powder
  • 1/2 tsp lemon juice

Dipping sauce

  • 2 tbsp coconut oil
  • 1/2 small onion
  • 1 chilli
  • Clove of garlic
  • 150g Peanut butter
  • 1 tsp honey
  • 200ml coconut milk
  • 1 tsp fish sauce
  • 2 tsp soy sauce


The chicken marinade

  1. Pre-heat oven to 180C/ Gas mark 4
  2. Dice up the chicken breast into equal sized cubes. This will help them to cook around the same time.
  3.  Blitz all of the ingredients of the marinade together in a food processor
  4. Coat the chicken in the marinade and leave covered in a food bag or bowl overnight or a few hours.
  5. Carefully put the chicken onto skewers

Peanut dipping sauce

  1. On a medium heat in a pan sweat the onion, garlic and chilli
  2. Whilst stirring add the peanut butter and honey
  3. Once that’s heated through add the fish sauce and soy sauce
  4. Blitz the sauce and drizzle in the coconut milk


Top tips

Do try to cook these on the bbq instead of the oven
