Smoked Salmon & eggs

A special brunch dish for a weekend treat, best served in bed. This is easy to make but you should take your time to get it right and you will notice the difference.



  • 3 med eggs
  • Salt
  • Pepper
  • Butter
  • Smoked salmon
  • Crusty bread
  • Rocket



  1. Firstly put a frying pan on a medium heat
  2. Crack your eggs into a bowl, season and whisk
  3. Once the pan is heated throw your butter in and swirl it around the pan
  4. Now that the butter has melted throw in your eggs
  5. Constantly slowly move them around the pan using a soft spatula or wooden spoon. The more time you take with this process the creamier the result.
  6. Once cooked plate immediately with layers of smoked salmon and your rocket


Top tips

I normally cook my scrambled eggs just under my finished preference because they continue to cook on the plate just from the residual heat. If you do this your eggs wont end up overcooked but will be light and fluffy
