This was a lovely sandwich I had at Princi in Soho, London. Caprese itself is an Italian salad that is so simple it makes you think there should be more to it! But the beauty is in its simplicity and flavours that work so harmoniously you would only be doing damage to the dish by adding more. Simplicity is key!
Ingredients
- 1 ball buffalo mozzarella
- 2 medium sized tomatoes
- Small bunch of basil
- Olive oil
- Salt & pepper
Method
- Slice the tomatoes and lay onto a serving plate/board
- Tear/slice the mozzarella and place around the tomatoes
- Tear off some basil leaves and scatter around the plate
- Now season the whole plate with flaky sea salt and freshly ground black pepper
- Drizzle good quality olive oil over the lot

Get your tomatoes out of the fridge an hour before using them to take the chill off them
